Her på Kombucha Guiden skriver jeg, Michala Kramer, om alt hvad jeg ved omkring Kombucha. Det gør jeg til alle som har interesse i brygning af den populære drik – eller til fermentering i en bredere forstand. Jeg har samlet nogle af de spørgsmål i denne FAQ, som jeg har fået flest af i løbet af min kombucha-karriere.


Hvem står bag Kombucha Guiden?

Jeg, Michala Kramer, står bag kombucha universet Kombucha-guiden.dk. Kombucha Guiden er lavet ud fra mine egne erfaringer gennem det seneste år – fra en nysgerrig og uviden kombucha brygger. Da jeg startede, syntes jeg, at der manglede relevant og fyldestgørende information på nettet. Efter et halv års tid – og en masse erfaringer rigere – der startede jeg Kombucha Guiden. Jeg er hverken uddannet indenfor fødevareteknologi eller molekylær ernæring. Men jeg ved en masse omkring brygning af kombucha – og hvordan du kommer igang med din brygning.

Indholdet her på siden, er primært målrettet til begyndere, der gerne vil lære at brygge selv. Jeg brænder for emnet, og jeg elsker at inspirere andre til at lave lækre og nemme opskrifter. Derfor kan du også finde mig aktiv på bloggen Micadeli.com – en madblog med nemme vegetariske opskrifter.

Hvordan laver man kombucha?

Kombucha laves kort sagt ved, at man blander te, vand, sukker i en stor beholder sammen med en scoby-svamp. Herefter lader man teen stå et stille og roligt sted og fermentere i 10-14 dage. Drikken er kendt ved at være en lækker kombination af sødme, syre og friske blide bobler.
Bare rolig – man skal ikke være kemi-ekspert eller have arbejdet med fermentering for at være med. Alle kan lave hjemmebrygget kombucha! Læs om kombucha guiden – step by step.

Er Kombucha sundt?

Kombucha har i mange år været brugt som medicin til at behandle gigt, hjælpe mod sygdomme og at kunne helbrede sår. Nogen mener også, at det kan bekæmpe hårtab. Der har tidligere været forskning som kunne bekræfte det, men nyere forskning har ikke kunne dokumentere det endnu. Det gør altså, at svaret ikke helt kan bekræftes.. Nogen studier har dog påvist, at man både har fundet organiske syrer, gær, bakterier og vitaminer – som skulle siges at have sundhedsfremmende effekter. Læs mere om sundhedspåstandende her.

Hvor lang tid kan kombucha holde sig?

Kombucha har det fantastiske potentiale, at man ikke behøver at servere det, samme dag som det fremstilles. Drikken har en meget lang holdbarhed pga. dens naturligt lave pH værdi. Kombucha bevarer friskheden, når det kommer på flaske og stilles på køl. Derfor er der næsten ingen begræsning på, hvor længe det kan holde sig – smagen kan variere alt efter 6 måneder til et helt år.

Hvad er en scoby – og hvor køber man den?

Hvad er en scoby? – få hele svaret her. Kort sagt, så er en SCOBY er en vandmandslignende, gelé agtig svamp, som består af flere forskellige bakterier og gærceller. Scobyen er med til at tilføre kraft og smag i drikken, og sørger for at hele kombucha-fabrikken kan køre rundt, som den skal.

Scobyen kan fås fra andre der brygger kombucha, da de ofte har ekstra scoby til overs. Ellers kan de nemt købes på nettet fx over Den Blå Avis eller måske i udvalgte specialbutikker og helsekost forretninger. Du kan læse mere her: Hvordan får jeg fat i en scoby? – få svaret her

E-bogen: ‘Den komplette kombucha-guide for begyndere’ er snart klart til udgivelse. I bogen vil jeg skridt-for-skridt guide dig til, hvordan du kommer igang, og hvordan du brygger din egen første kombucha til perfektion. Herudover vil bogen være fyldt med tips og tricks, ekstra viden, masser af opskrifter – og så deler jeg ud af alle mine gode erfaringer.
